Second attempt at baking *You know I was never interested in baking before, right?*. Baking is like something that other people should be doing. I like cakes and cookies as long as I don’t have to bake them. Then I realized that cakes and cookies make better photo models than, say, veggie stirfried or barbecued chicken. They’re kinda…. cute! Besides, Mike loves sweets. So there you go. I have to start learning to bake at some point. 

Mind you, this is only the second trial. The first attempt was sort-of-a-disaster. *sigh* The cheese muffins end up with a smoky flavours from the burnt drippings. That and the flathead muffins. But these ones looked AND tasted good. Quite proud of myself.🙂

 

Crossbun Muffin Recipe

Ingredients:
* 2 cups all purpose flour
* 2  tsp baking powder
* ½  tsp  salt
* 1 cup milk
* ¾ cup sugar
* 1 egg
* ½ tsp lemon rind
* ½  tsp orange rind
* ½ vanilla powder
* 1 cup raisins
* 1/4 tsp bread/cake softener – Wysman brand
* 125 gr melted butter

Directions:
1.) In a clean bowl, mix flour, sugar, baking powder, vanilla powder and salt
2.) In separate bowl mix in milk, melted butter, egg & bread/cake softener, orange & lemon rind
3.) Mix both of bowl, whisk well. Add raisins
4.) Fill the mixing into muffin pan
5.) Bake in a pre-heated oven 190C for 15-20 mnts
